	Quinoa, pronounced KEEN-wah, is a 'pseudo-cereal', grain-like superfood from the Andes Mountains in Ecuador. It was first cultivated over 7,000 years ago, making it one of the oldest cultivated plants in the world. The Incas held quinoa to be sacred, calling it "Chisaya Mama", or Mother of all Grains, with the Emperor actually planting the first quinoa seeds of the harvest each year using golden implements. For cooking 1 cup of quinoa, use 2 cups of water, add both ingredients to a 2 quart pot, bring to boil, turn heat down to simmer, and let cook for 12-15 minutes. Remove from heat, let it sit for 5 minutes with the lid on, and fluff gently with a fork before serving. Quinoa is the most nutritious grain available and is high in protein, calcium, and iron. It is a complete protein, a complex carbohydrate, gluten-free, and a good source of manganese and copper minerals that act as antioxidants in your body to get rid of dangerous cancer and disease-causing substances.
